Prepare Buttermilk Biscuits. While biscuits are baking, prepare Cheesy Scrambled Eggs. Split biscuits and fill with scrambled eggs. Serve hot.

Buttermilk Biscuits

Buttermilk (or Sour Milk) Biscuits
A delightfully delicate and satisfying biscuit recipe that is quick and easy to make. This recipe is the Better Homes and Gardens' "Biscuits Supreme" (Buttermilk version). For making sandwiches you will want to use shortening for the fat so that your biscuit is substantial enough to hold the sandwich ingredients. If you prefer to eat the biscuits separately, try replacing half the shortening with butter for a delicate buttery flavor and texture!

4 cups all-purpose flour
8 Teaspoons baking powder (2 Tablespoons + 2 Teaspoons)

1 Teaspoon cream of tartar
1 Teaspoon salt
1/2 teaspoon baking soda

4 Teaspoons granulated sugar (1 Tablespoon + 1 Teaspoon)

1 cup shortening

1 1/2 cup buttermilk (sour milk: 1 1/2 Tablespoons lemon juice + addition of enough milk to make 1 1/2 cups)
2-4 Tablespoons melted butter

Step 1
Pour buttermilk OR make your own sour milk by putting lemon juice in a measuring cup and adding enough milk to make 1 1/2 cups sour milk.

Step 2
Measure dry ingredients (flour, baking powder, salt, baking soda, and sugar) into large mixing bowl. Stir lightly to mix.

Step 3
Measure shortening. When measuring shortening you must frequently press the shortening to press out the air pockets that take up space in the measuring cup. Once the measuring cup is full, and all the air is compressed you are ready to level off the shortening. Level the shortening by scraping a flat knife or spatula over the top, scraping off excess. Place the 1 cup of shortening into the bowl with the dry ingredients.

Step 4
Cutting in the shortening. Shortening or butter must be cut into the dry ingredients. A pastry cutter (curved bottom with multiple edges) works great for this. Using a rocking cutting motion, push the pastry cutter into the shortening and stir the pieces lightly to coat with the flour mixture. Turn the bowl slightly and repeat. Continue to do this until there are no pieces of shortening larger than a pea.

Step 5
Adding the milk. Make a 'well' in the flour mixture and add the milk. Stir with a large fork just until the dough is forming a ball and begins to clean the sides of the bowl.

Step 6
Shaping the dough.
Drop method: The biscuit dough could be dropped directly onto a pan by using a fork or spoon.
Pat in the pan method: You could also pat the dough onto a large, greased baking pan and cut into the desired shapes. This works well if you prefer to make square biscuits, not wanting to throw away excess dough.
Roll method: If you prefer the round biscuits, lightly sprinkle a large, flat surface with all-purpose flour. With lightly floured hands knead the dough 6-10 times by folding the dough in half towards you and pushing into the dough with the palms of your hands. Turn the dough a quarter turn, fold in half towards you and press into the dough with the palms of your hands. Repeat until dough is no longer sticky (no more than 10-12 times). Roll lightly with a rolling pin to a depth of 1/2 - 1 inch thick. Cut biscuits with a large floured cup or biscuit/cookie cutter (I like them about 3 inches in diameter). Place on greased baking pan.

Brushing the biscuits with melted butter before baking gives them a lovely brown color, and a delicious buttery taste!

Bake in 450 degree oven for 10-12 minutes. Let cool slightly before filling or topping with ingredients of your choice.

Cheesy Scrambled Eggs

Cheesy Scrambled Eggs

2-3 large eggs per sandwich
1 slice American cheese (or your favorite cheese) for every 2 eggs

Whisk eggs in a large bowl until the eggs are light and fluffy. Pour eggs into a saucepan heated over medium high heat. Add the cheese (break into at least 4 pieces if using sliced cheese). Stir occasionally to keep the eggs from burning. Serve at once.

Baked "Fried" Chicken

You will love this guilt-free version of a crispy chicken without the fat! The coating is a mixture of bread crumbs and instant potato flakes that makes for a crispier, more flavorful crust.

4 boneless, skinless chicken breasts, thawed
2 cups seasoned bread crumbs
2 cups instant potato flakes
2 large eggs, whisked + 1 Tablespoon water
Flour, all-purpose
Truffle, olive or vegetable oil

Preparation:
1. Preheat oven to 350 degrees fahrenheit.
2. Grease a baking dish large enough to hold the chicken pieces, allowing for 2-3 inches between pieces.
3. Place 1-2 cups flour in a plate, bowl or bag (see below).
4. Place 2 eggs + 1 Tablespoon water in a bowl and whisk till the mixture is an even consistency.
5. Mix the bread crumbs and potato flakes in a baking dish or pie plate.

Coat the defrosted chicken breasts in flour.
There are 2 ways to do this: place the flour in a zippable plastic bag or tub, add the chicken and shake OR place the flour in a bowl or pie pan and press the chicken into the flour, turning to coat all sides.

Dip the coated chicken breasts in egg/water mixture making sure that all sides are coated.

Dredge the chicken pieces in the crumb/potato flake mixture, making sure that all sides are coated.

Place chicken in a greased baking dish and bake in a 350 degree oven for approximately 30 minutes. Chicken should be golden brown. Remove from oven and let sit for 5 minutes before serving. According to the USDA, chicken should be cooked to an internal temperature of 165 degrees fahrenheit.

Tip: A digital meat thermometer is an essential gadget.

Scalloped Corn

Adapted from Better Homes and Gardens New Cookbook. This is a very simple recipe that kids love!

  • 1 17-ounce can cream-style corn
  • 1 cup milk
  • 1 beaten egg
  • 1/4 cup chopped onion (optional)
  • 3 Tablespoons chopped pimiento (optional)
  • 1 sleeve Ritz or saltine crackers crushed (we prefer the buttery taste of Ritz crackers)
  • 1 Tablespoon butter, melted (we omit the butter)
  • Salt and pepper to taste (we never add this because the crackers add adequate salt)

Preparation:
1. Preheat oven to 350 degrees fahrenheit.
2. Grease 1 quart baking dish.
3. Crush the crackers. (This is very easily done by placing the crackers in a sealable bag and crushing by hand or with a rolling pin)

Combine the egg, milk and cream-style corn in a greased 1-quart baking dish. Stir in 1/2 - 2/3 of the crushed crackers. Sprinkle the remaining cracker crumbs over the top. Bake for approximately 1 hour, or until knife inserted in center comes out clean.

Orange Walnut Salad with Raspberry Vinaigrette

This salad is quick to prepare, beautiful to look at, and is a delightful way to add vegetables, fruit and nuts to your diet!

  • 4 cups Spring Mix lettuces, romaine, spinach (your choice of one or all three combined)
  • 1 15 ounce can Mandarin Oranges, drained
  • 1 cup walnuts
  • Parmesan cheese
  • Raspberry Vinaigrette dressing of choice

Rinse and dry greens of choice and place in a bowl. Toss in mandarin oranges, walnuts and parmesan. Serve with raspberry vinaigrette dressing.
